I am glad that I’ve been able to inspire so many of you to eat healthier since I did the Whole 30 diet in January and have kept you updated on my progress. I’m still working on eating healthy and staying away from sugar. Energy levels are still high and I’m getting things done! Plus summer is coming and who doesn’t want to look their best in their swimwear, right?

Imagine how excited I was when I read this article from the Medical Medium blog on how good dates (the food!) are for improving energy and brain function, reducing inflammation, lowering blood pressure and LDL (bad) cholesterol and so much more.

Since discovering this, I have been making this amazing chocolate mousse dessert that only has natural sugar coming from dates!

The chocolate mousse is so rich and sweet, and because it’s so decadent, I eat a smaller serving than I normally would of ice cream so I don’t feel like I’m overindulging.
